B. Himalaya-Salz<br>Pfeffer, z. B. Lampong-Pfeffer<br>1 TL Cayennepfeffer<\/p>\n\n\n\n<p><strong>Tempura-Teig<\/strong><\/p>\n\n\n\n<p>50 g Mehl<br>1 dl Wasser<br>1 EL Oliven&ouml;l<br>2 TL Salz<br><br>F&uuml;r den Teig alle Zutaten mischen und glatt r&uuml;hren. Ca. 30 Minuten k&uuml;hl stellen.<\/p>\n\n\n\n<p>Weiter gehts&Ouml;l in einer hohen Pfanne auf ca. 180 &deg;C erhitzen. Inzwischen Salbeibl&auml;tter abzupfen und mit Mehl best&auml;uben. Bl&auml;tter durch den Tempura-Teig ziehen und portionenweise, ohne dass sie Farbe annehmen, frittieren. Auf einem K&uuml;chenpapier abtropfen lassen und beiseitestellen.<\/p>\n\n\n\n<p>Wenig &Ouml;l in einer Bratpfanne erhitzen. Entrec&ocirc;tes bei mittlerer Hitze beidseitig je ca. 4 Minuten anbraten. Beiseitestellen und ca. 15 Minuten zugedeckt ruhen lassen. Backofen auf 220 &deg;C vorheizen. Zucchetti in ca. 5 mm d&uuml;nne Streifen, Knoblauch in feine Scheiben schneiden und beiseitestellen. Mozzarella halbieren und in ca. 5 mm dicke Scheiben schneiden. Entrec&ocirc;tes in einer Gratinform mit Mozzarella belegen. In der Ofenmitte ca. 5 Minuten &uuml;berbacken.<\/p>\n\n\n\n<p>Inzwischen wenig &Ouml;l in einer Bratpfanne erhitzen. Beiseitegestellte Zucchetti und Knoblauch bei hoher Hitze ca. 1 Minuten anbraten. Mit Salz, Pfeffer und Cayenne w&uuml;rzen.
