Petersilie, Thymian<br>1,2 kg Rindshackfleisch<br>3 EL Senf<br>2 Eier<br>2 TL Salz<br>1 TL edels&uuml;sser Paprika<br>Pfeffer aus der M&uuml;hle<br>1 mittelgrosse Zucchetti &agrave; ca. 300 g<br>110 g Bratspeck<br>4 EL Sonnenblumen&ouml;l<br>3 EL Tomatenp&uuml;ree, ca. 70 g<br>8 dl Bratenfond<\/p>\n\n\n\n<p>Backofen auf 180 &deg;C Unter-\/Oberhitze vorheizen. Toastbrotscheiben in St&uuml;cke zupfen und in ca. 1 dl Wasser einweichen. Zwiebeln und Knoblauch hacken. Toast gut ausdr&uuml;cken.<\/p>\n\n\n\n<p>Kr&auml;uterbl&auml;ttchen abzupfen und hacken. Die H&auml;lfte der Zwiebel-Knoblauch-Mischung mit Kr&auml;utern, Fleisch, Brot, Senf, Eiern, Salz, Paprika und Pfeffer in eine Sch&uuml;ssel geben.<\/p>\n\n\n\n<p>Gummihandschuhe anziehen und Masse gut verkneten. Zu einem l&auml;nglichen Braten formen.<\/p>\n\n\n\n<p>Zucchetti mit einem Hobel l&auml;ngs in ca. 14 Zungen hobeln. Restliche Zucchetti in W&uuml;rfelchen schneiden.<\/p>\n\n\n\n<p>Braten abwechselnd mit Speck und Zucchettizungen leicht &uuml;berlappend belegen.<\/p>\n\n\n\n<p>In einem Br&auml;ter &Ouml;l erhitzen. Restliche Zwiebel-Knoblauch-Mischung, Zucchettiw&uuml;rfel und Tomatenp&uuml;ree dazugeben und anbraten. Gem&uuml;se etwas beiseiteschieben und Braten dazulegen. Mit Fond abl&ouml;schen.<\/p>\n\n\n\n<p>Im Ofen ohne Deckel 60-75 Minuten garen. Ab und zu Braten mit etwas Fond begiessen.fast fertig<\/p>\n\n\n\n<p>Zum Servieren Hackbraten mit zwei Spachteln aus der Sauce heben. Sauce mit einem Stabmixer p&uuml;rieren. Mit Salz und Pfeffer abschmecken.
